Pumpkin Chicken Curry
Ingredients
- 1/3 cup tomato spaghetti sauce
- 1 can (15 oz) pumpkin puree
- 1 can (15 oz) coconut milk
- 1 cup chicken broth
- 1 TBS onion powder
- 1 TVS garlic powder
- 2 tsp curry powder
- 2 chicken breasts
- Cooked Brown rice (for serving)
- Fresh cilantro
Instructions
- In your crockpot, combine the canned products, broth and spices. Whisk together well to combine. Sink the chicken down into the sauce and cover. Cook on low 4-6 hours. The chicken should easily shred when stirred. Serve over ½ cup brown rice and garnish with fresh cilantro.
