Pumpkin Chicken Curry

Ingredients

  • 1/3 cup tomato spaghetti sauce
  • 1 can (15 oz) pumpkin puree
  • 1 can (15 oz) coconut milk
  • 1 cup chicken broth
  • 1 TBS onion powder
  • 1 TVS garlic powder
  • 2 tsp curry powder
  • 2 chicken breasts
  • Cooked Brown rice (for serving)
  • Fresh cilantro

Instructions

  1. In your crockpot, combine the canned products, broth and spices.  Whisk together well to combine.  Sink the chicken down into the sauce and cover.  Cook on low 4-6 hours.  The chicken should easily shred when stirred.  Serve over ½ cup brown rice and garnish with fresh cilantro.
